Straight Bourbon Whiskey Finished in Honey Cask Single Barrel Selection: DC-885

This Single Barrel Selection was distilled at MGP Indiana in January 2017, where it matured for 7 years in its original charred oak barrel. The whiskey was then brought up to Copper & Cask HQ to finish in a barrel we seasoned with honey from the Chicago Honey Cooperative.

Mash Bill: 75% CORN, 21% RYE, 4% MALTED BARLEY
56.8% ABV

Tasting Notes:
On the nose, this whiskey is delicate with aromas of jasmine and white tea. The mouthfeel is rich, with flavors of clover honey and honeysuckle before livelier flavors of lemon curd and candied grapefruit peel emerge. The finish is long with hints of vanilla bean, butterscotch and fennel pollen.
